Paleo Knife
Anyone else make their own coconut milk?
Since I’ve adopted the Paleo/caveman way of eating (cutting out grains, legumes & dairy), I learned how to make my own coconut milk at home. It’s a pain in the butt, but totally worth it! It’s creamy, tastes amazing in my coffee (since that’s all I use it in) and there’s just no comparison to the canned stuff when it comes to taste and texture.
I start by trying to crack the shell so it cleanly separates from the meat. Sometimes I get lucky and the brown outer skin comes off with it, other times I have to trim it off with a sharp knife. Then I cut the coconut into large pieces, put them in my blender, add about 2 cups of water and blend until it’s a free-flowing but thick consistency. After I strain out the fibers with a cheesecloth, I’ll yield about 16 oz and it keeps in the fridge for up to 2 weeks.
Anyone else make their own? Any tips?
It’s too much of a hassle to make from scratch seeing you can buy it at the store. My mom used to make it from scratch they way you describe. She would use the milk in her rice pudding.
