White cheese used in American-Mexican restaurants?
Just so you know I live in the North East and all the restaurants around here seem to use the same delicious white cheese that go on tacos. I’ve tried almost all the Mexican cheeses from my local Mexican grocery store and still no luck. Today I bought Cacique (sp check) Mozzarella and once again no luck. I keep hearing Asadero and Oaxaca…LOL Unfortunately the store doesn’t carry those brands or they could have been sold out. Could it possibly be just some type of basic American cheese?
Queso Fresco is what you are looking for, or if it is a crumbly white cheese it is Cotija, similar to parmesean cheese but stronger and saltier. If you are looking for a shredding cheese and cannot find Queso Fresco use monterrey jack cheese.
