Aunt Jemima
How do you prepare pancake flour from all purpose flour? When I ran out of Aunt Jemima I was lost as to how to?
mix up a batch for breakfast and had to settle for cornflakes with dry milk.
You can simply substitute it – no worries. But I thought that Aunt Jemima was a mix that, like Jiffy Mix or Bisquick had things added in. I didn’t think it was simply flour.
You can Google a pancake recipe of your own choosing or use mine:
Ingredients
1-1/4 cups milk or buttermilk
3-1/2 teaspoons baking powder
1 teaspoon salt
2 tablespoons white sugar
1 egg lightly beaten
3 tablespoons butter, melted
1 teaspoon vanilla extract or crushed vanilla bean paste
1/2 teaspoon cinnamon (optional)
1-1/2 cups all-purpose flour
Directions
Combine all ingredients in a medium bowl except the flour and mix thoroughly. Sift the flour into a separate bowl. Don’t skip this step. If you don’t have a flour sifter, use one of those mesh strainers – just put the flour in it and tap the side and the flour will sift out. Measure the flour after it is sifted and add it to the wet mixture. Stir it gently, just enough to combine everything. It will be quite lumpy and that is okay. Don’t whisk it or use an electric mixer – it will overwork the batter and cause your pancakes to be tough. Cook them the same way you cook the Aunt Jemima mix.
